Your choice of wine and how you drink it is a matter of personal taste. This is what the French-born, English writer, Hillaire Belloc, had to say, “All – or nearly all – Red wine is better for having just one or two drops of water poured into the first glass only.
Why this should be I know not, but so it is. It introduces it. This admirable and little known custom is called ‘Baptising’ wine.”
