The opening of Château de Cîteaux places a serious new hotel directly inside one of Burgundy’s most desirable wine villages. The Fontenille Collection property occupies an elegant château in Meursault, layered above Cistercian cellars dating to the 12th century and surrounded by the vineyards of the Côte de Beaune.
The first phase offers 18 rooms, with a further 17 scheduled for early 2027. Its restaurant, Célestine, is led by chef Christophe Vauthier and draws on Burgundy’s most evocative ingredients, including Bresse poultry, local cheeses and regional produce. A literary library created with Gallimard gives the interiors a cultivated, residential atmosphere rather than the anonymous gloss of a conventional luxury resort.
Wine is not an accessory here but the organising principle. The list emphasizes Côte de Beaune growers, while cellar tastings are expected to begin in September. With Meursault, Puligny-Montrachet, Volnay and Beaune within effortless reach, the château makes it possible to experience Burgundy without commuting from Dijon or relying on increasingly scarce private accommodation.
